Ingredients
- 1.5 lbs boneless skinless chicken thighs
- 2 tbsp olive oil
- 1 tbsp chili powder
- 1 tsp cumin
- 1 tsp garlic powder
- 1/2 tsp smoked paprika
- Salt and pepper to taste
- Juice of 1 lime
- 8 small flour or corn tortillas
- Toppings: diced avocado, fresh cilantro, pickled onions, salsa, sour cream, shredded cheese
Instructions
- Toss chicken thighs with olive oil, chili powder, cumin, garlic powder, smoked paprika, salt, and pepper.
- Heat a skillet or grill pan over medium-high heat. Cook chicken 4-5 minutes per side until cooked through (165F internal).
- Let chicken rest 5 minutes, then slice or chop into bite-sized pieces. Squeeze lime juice over the top.
- Warm tortillas in a dry skillet or directly over a gas burner for a few seconds per side.
- Load up tortillas with chicken and your favorite toppings. Serve with extra lime wedges.
Make it ahead: Season and cook the chicken up to 2 days ahead. Reheat in a skillet and assemble tacos fresh when ready to eat.
