Ingredients

  • 4 boneless skinless chicken breasts, pounded thin
  • 1 cup all-purpose flour
  • 3 eggs, beaten
  • 2 cups Italian breadcrumbs
  • 1/2 cup grated Parmesan
  • 2 cups marinara sauce
  • 2 cups shredded mozzarella
  • Olive oil for frying
  • Salt, pepper, garlic powder
  • Fresh basil for garnish

Instructions

  1. Preheat oven to 425F. Season chicken with salt, pepper, and garlic powder.
  2. Set up breading station: flour in one dish, beaten eggs in another, breadcrumbs mixed with Parmesan in a third.
  3. Dredge each cutlet in flour, dip in egg, press into breadcrumb mixture on both sides.
  4. Heat olive oil in a large oven-safe skillet over medium-high heat. Pan-fry cutlets 3 minutes per side until golden.
  5. Spoon marinara over each cutlet, top with mozzarella.
  6. Transfer skillet to oven. Bake 15 minutes until cheese is bubbly and golden.
  7. Garnish with fresh basil. Serve with pasta or a simple salad.
