Ingredients

  • 1.5 lbs boneless skinless chicken thighs
  • 2 tbsp olive oil
  • 1 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp garlic powder
  • 1/2 tsp smoked paprika
  • Salt and pepper to taste
  • Juice of 1 lime
  • 8 small flour or corn tortillas
  • Toppings: diced avocado, fresh cilantro, pickled onions, salsa, sour cream, shredded cheese

Instructions

  1. Toss chicken thighs with olive oil, chili powder, cumin, garlic powder, smoked paprika, salt, and pepper.
  2. Heat a skillet or grill pan over medium-high heat. Cook chicken 4-5 minutes per side until cooked through (165F internal).
  3. Let chicken rest 5 minutes, then slice or chop into bite-sized pieces. Squeeze lime juice over the top.
  4. Warm tortillas in a dry skillet or directly over a gas burner for a few seconds per side.
  5. Load up tortillas with chicken and your favorite toppings. Serve with extra lime wedges.

Make it ahead: Season and cook the chicken up to 2 days ahead. Reheat in a skillet and assemble tacos fresh when ready to eat.
